Stir-Fried Beef Skin with Green Beans is a classic Indonesian home-style dish featuring tender, chewy beef skin in a savory, sweet, and mildly spicy sauce. Ingredients:
- 500 g beef skin (kikil)
- 150 g green beans, cut into bite-sized pieces
- 2 pieces ginger (about 6 cm), crushed
- 5 tbsp cooking oil
- 1 tbsp CAP IBU White Basic Seasoning Paste
- 2 tbsp CAP IBU Red Basic Seasoning Paste
- 1 stalk lemongrass, bruised
- 4 Indonesian bay leaves
- 1 thumb-sized piece galangal, bruised
- 4 tbsp sweet soy sauce
- 1 tbsp oyster sauce
- ¼ block palm sugar (about 50 g)
- 1 tsp seasoning powder
- 150 ml water
How to Cook:
- Boil the beef skin with the ginger until tender. Drain and set aside.
- Heat the cooking oil. Sauté the CAP IBU White Basic Seasoning, CAP IBU Red Basic Seasoning, Indonesian bay leaves, lemongrass, and galangal until fragrant.
- Add the cooked beef skin, palm sugar, seasoning powder, sweet soy sauce, oyster sauce, and water. Stir well.
- Cook until the seasonings are absorbed and the liquid has reduced.
- Add the green beans and stir to combine.
- Continue cooking until the green beans are tender and the sauce has reduced.
- Remove from the heat and serve warm.
Note :
This recipe uses beef skin (known as kikil in Indonesia).
If you prefer a chewier texture, you can substitute it with beef tendon from the leg (kikil) in the same quantity.
